Since the default `nSequence` is `0xFFFFFFFE` and locktime is enabled, the checking `wtx.is_final` is meaningless until the syncing has completed (ref: #1026). This PR makes the wallet mark a transaction "Unconfirmed" instead of misleading "Open for NNN more blocks" when syncing after a period of being offline. This moves the Dock icon click reaction code to the common place and allows some cleanup in obj_c code. According to the Apple's docs `class_replaceMethod` behaves as `class_addMethod`, if the method identified by name does not yet exist; or as `method_setImplementation`, if it does exist.
